What better place to start the Tourism Board than with both a fantastic Tiramisu, and with something close to home.

Flynn's Deli is an independent Delicatessen and eatery situated on the Walter Road in Swansea, a home for those who know their 'nduja from their sobrassada, day-drinking wine enthusiasts, and those simply looking for a freshly made bagel. Flynn's stocks a wide variety of independently produced products, both from the local area and from much further afield. They're known for their home-made bagels, and the variety of fillings and toppings that allows you to close your eyes and turn a dark, damp Swansea weekend into something approaching Mediterranean, transporting you to Sicilian beaches, far-flung olive groves and rural vineyards in warmer climates.

Walking in, it's clear Flynn's is a labour of love. Between beautifully stocked shelves full of an array of olive oils, boutique chocolates, pickles, cans, and near anything you can imagine, there's a sort of 'chefishness' about the place; the clear pride in their home-sliced meats, the energy of a chef who can't help but be a little show-offish. The open Deli counter and meat slicer would be at home near-anywhere, but the tucked-away seating area allowing a little peace from the hustle while you eat, and the totally-open-to-the-world kitchen comes from someone who clearly understands what it takes to show people you really care about the food you're making.

There is one extra-special day a month, though. Unfortunately, it does come somewhat unexpected every time, and I'm convinced Chris Flynn is conspiring to stop me from eating the entire tray by moving the day. On the semi-regular occasion that Flynn's provides their Tiramisu, you realise you've won the monthly game of Hide-And-Seek that Chris Flynn is playing with your tastebuds.

To start, this is a monstrous slice. For £6.50, you're given a slice of tiramisu that would make Mr Creosote blush. The experience truly starts, though, when that first waft hits you. Flynn's manage to make a thick, ladyfinger-dense dessert that hits all the right notes. Not happy to rest on their laurels with the quantity of dessert they provide, they also work to provide one of the better Tiramisu I've tried; it's practically falling-over-drunk with coffee, so thoroughly soaked it threatens to collapse in all the best ways.

They've even gone out of their way to grate chocolate over the top - another light touch that goes potentially unnoticed, but means the sometimes dry and dusty surface of a dense dessert is transformed into a rich, melt-in-the-mouth moment as the chocolate shavings melt into the creamy richness of the cream. If you're a real purist you might find yourself upset over this break in our regularly scheduled programming and mourn the loss of that cocoa powder, though for me it really does give that opening bite some extra depth and complexity.

Taking a slightly different approach to many by layering ladyfingers, mascarpone cream, more ladyfingers, and even more mascarpone cream; Flynn's Tiramisu is able to keep enticing you in for another bite - every spoonful gives you the full experience, rather than the oh-so-disappointing, "Oh, it's just cream for this spoon."

It's not all perfection here though; coming straight from the fridge, this dessert really needs a little while to come to temperature to really let the coffee and cream sing, and who has that kind of restraint? The ladyfingers do end up slightly soft under the weight of the liquid, and end up missing a little bit of the bite and textural contrast you might hope for, though neither of these truly detract from the fact that what Flynn's has managed to create is a dessert that allows you to really indulge.

All in all, Flynn's is without doubt a worthy first member of the "Priority Pass" group for the TTB, and we are proud to call them a local Tiramisu hotspot. If Flynn's ever stop this monthly game of Tiramisu Roulette, they may well find themselves with riots on their hands.
